Bacterial spores are a major problem in the food industry and in hospitals. Their high resistance allows them to escape the food processing treatments designed to inactivate bacteria. Wishwas Abhyankar explores the proteome (the entire complement of proteins that is or can be expressed in a cell, tissue or organism) of pathogenic bacterial spores with the aim of acquiring a more thorough understanding of the resistant mechanisms of spores, as well as the possible structural differences in spores of different species.
